This easy chicken stir-fry is a quick weeknight dinner that tastes like homemade takeout without a ton of work.
Ingredients :
2 boneless, skinless chicken breasts, cut into bite-size pieces
4 cups broccoli florets
1/2 red bell pepper, sliced
1 cup mushrooms, sliced
2 tbsp olive oil
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp oyster sauce or teriyaki sauce
1/2 tsp black pepper
Salt, to taste
Pinch of red pepper flakes, optional
How to Make It :
Season the Chicken:
Pat the chicken dry, then season it with black pepper and a light pinch of salt. This helps build flavor right away and gives your healthy meal prep a solid start.
Cook the Chicken:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through, about 6 to 8 minutes. Transfer it to a plate so it stays juicy for this high-protein lunch idea.
Sauté the Veggies:
Add the remaining oil to the pan, then toss in the broccoli, mushrooms, and red bell pepper. Cook for 5 to 6 minutes, stirring often, until the broccoli is tender with a little char. It gives this broccoli stir-fry that fresh, real-deal texture.
Add the Sauce:
Stir in the garlic, soy sauce, and oyster sauce. Add the chicken back to the pan and toss everything together for 1 to 2 minutes, until glossy and well coated. Now it’s got that homemade takeout vibe with barely any fuss.
Serve and Enjoy:
Serve it hot on its own or over rice if you want a heartier plate. It also keeps great in a container for an easy dinner or next-day lunch.
